Wanna know something – it’s already mid January. We’ve all tackled 18 days of the new year. So how many of you stuck to your new year, new me resolutions? That is if you made them!? I’m not a resolutioner at all to be quite honest. Not that I frown my nose on them. I did make a goal last year to visit a place here called “The Mint,” and I sadly never got around to it. I had 365 days and totally didn’t do it – epic fail.
On the whole resolution thing, the big trend you tend to hear a lot about is: “let’s get healthy!” AKA: lose weight! Being at home while on mat leave it’s all I hear on the news or on daily morning shows I have on in the background while I’m doing 101 things. It’s hard not to listen to all the conflicting advice and laugh a little bit. I try to stay healthy for the most part and since having baby number 2 I’ve noticed things aren’t quite going back to shape they way I’d like them to be!
I’m definitely more self conscious, but I know things will get there in due time. So for now I just maintain what I can through eating healthy (most of the time) and try to find the time to get in some exercise somewhere! It’s a bit tough these days as I literally fall asleep at 8:30, and exercise during the day isn’t an option cause Dash falls asleep on me as I’m a baby wearing mama. My transferring technique is pretty brutal. My success rate is 2%!
On that note, I totally have this obsession with sweet potatoes. I’m batting 5 out of 7 days where they land a spot on my dinner plate. The best way to get the rest of the house hold to eat them is this way. Let’s just say there not fans the way I am about this vegetable! Crazy, right!? It’s so delicious. I find these crisps are a way better alternative to chips, and in my opinion taste way better and maybe in my head I feel a little less guilty eating a whole bunch!
The nice thing too is they fall into plenty of diets if you subscribe to them. They’re gluten free, dairy free, and paleo & vegan friendly! I love anything homemade, and when you tell me I can have baked chips and feel good about them, well that’s a huge bonus. If you’re like me, you’ll be heading out to the grocery store and buying a nice share of sweet potatoes this week to fufill your chip cravings!
Baked Sweet Potato Crisps
1 peeled, very thinly sliced sweet potato
1 Tbsp extra-virgin olive oil
Coarse sea salt
1 – Heat oven to 400 degrees.
2 – On two baking sheets, toss sweet potato with oil and season with salt.
3 – Arrange in single layers and bake, flipping halfway, until crisp and golden, 20 to 25 minutes.
