So a few things to celebrate here: I’m actually awake past 7:30 p.m, I’m watching the Golden Globes (my all time favourite award show, ps. Ricky Gervais is my hollywood hero), my newest little raisin has made this world a better place for the last 12 weeks AND I’m writing an actual blog post. Say whaaaaaa!? I think this calls for some champagne! The previous post about podcasts I was literally feeling contractions and pretty much in denial that things were happening. Long story short I had a sweep done and all the advice I had been given said I probably wouldn’t be having the baby just yet. Little did they know he’d arrive a few hours later!
I’m still in awe we’re a family of four. I have the best time saying “my boys,” and since our newest addition things have been mighty busy! Demands are round the clock, every moment of my day is allotted with errands, feeds, diaper changes, you name it! So hence the 7:30 bedtime for mama. It’s not like I plan to go to bed then, but I inevitably fall asleep nursing and cradling the sweetest smelling baby in my arms. Seriously look at these 2.
Lately I’ve been on a health train. I’m ready to get in “shape” and nourish my body in a way that will get me there in a healthy way. I had a GREAT week, but kinda indulged a bit over the weekend with some sweets. It’s amazing how my body notices when I stray from good clean foods to processed ones…wafer cookies I’m lookin’ at you. I’m excited to start my detox tomorrow after a few cookies and more sugar then I’m used to.
This quinoa banana bowl is my go to breakfast choice lately – it’s so filling, tasty and keeps me energized all morning. Something not only mama’s need, but anyone who wants a great way to kickstart their day and keep their sugar levels in check.
Quinoa is such a great grain, it’s packed with protein, fiber, vitamins, minerals and it’s a totally one of those foods that fall in the low glycemic index category. For this particular breakfast I like to cook my quinoa in a mixture of almond milk and water for added flavour. When I say this keeps you full I’m not kidding – it’s a huge portion and I find that I can’t finish it in one sitting. That said check out the recipe below and ENJOY!

Quinoa Banana Bowl (serves 1)
1⁄2 cup of quinoa (uncooked)
1/2 cup of unsweetened vanilla almond milk
1/2 cup of water
1 tsp vanilla
1 tbsp of LSA (click here for info)
1 small banana
1 pinch of cinnamon (as much as you like as a garnish)
1 – Thoroughly wash the quinoa in water.
2 – Place 1/2 cup of water + 1/2 cup of almond milk + 1 tsp vanilla in a saucepan and bring to the boil.
3 – Add the quinoa to the water. Cover with a lid and reduce the heat to allow the quinoa to simmer for 10-20 mins.
4 – Turn off the heat and allow the quinoa to sit for a further 10 mins.
5 – Scoop the quinoa into a bowl and chop up the banana and place it on top of the quinoa along with the LSA.
6 – Sprinkle cinnamon on top if desired. Serve.
