I’m already in pyjama’s, and p.s it’s only 6:30 p.m. My feet are propped up on the coffee table, there are 3 pillows stacked behind my back and I’m sipping on a bottle of perrier. This is all totally normal behaviour for a 38 week pregnant woman, right?! Please say yes and humour me.
Are there any clothes comfier than pj’s? I love dressing up and shopping for new threads, but it’s like my body sighs when I put on these pillowy cotton threads.
Guess what though? I get to stay in my pj’s a little longer when I wake up these days. The morning routine is gonna be changing around here right away. I won’t have to get in the shower right at 6 a.m. make lunches, breakfasts, get dressed and be at work for 7:30. Starting Monday, I can actually enjoy colouring for 5 more minutes with Raisin and I’ll actually have time to MAKE a coffee AND enjoy savouring it with no rush in the world. This is all bound to happen because my last day of work was on Friday, leaving me with 12 days (in theory) before this minnow arrives. Let the nesting begin.
Leaving work on Friday was surreal, it doesn’t feel like my reality yet. On one hand it’s amazing that I don’t have to rush my weekday mornings, but on the other, I’m a creature of habit and love the routine the week brings. On the bright side I can make more cake, muffins and desserts to go along with those coffees I’ll be making in the morning…for a while anyways!
The smell in the air these days is surrounded by pumpkin spice everywhere you go. And FYI, I’m totally guilty over here on the pumpkin baking front pre fall. That scent and flavour is great and Octoberesque and all – but people seem to forget about apples and cinnamon! They’re totally right up there in the fall flavour zone. I can’t tell you how amazing apples are tasting these days, plus I’m an apple a day kinda gal.
When I bought our standard 2 bags of apples at the grocery store, I realized I needed to set a few aside to bake something. That’s where this cake came into the picture, and there’s a whole lotta goodness happening here! Thinly sliced apples, cinnamon, brown sugar and butter – convinced yet?
Aside from this cake being super simple to whip together, it isn’t too sweet, and lends an awesome texture between cake and a nice crunch of sweet apples. You could top it with some ice cream, or a simple drizzle of honey – any side is game as long as you enjoy it with some coffee…and maybe all while wearing your pyjamas.

Cinnamon-Apple Honey Cake
1/2 teaspoon ground cinnamon, divided
3/4 cup thinly sliced peeled tart apple
3 tablespoons butter, softened1/2 cup packed brown sugar
1/2 tsp nutmeg
1/3 cup 2% milk
1/4 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons honey
1 – Line a 6-in. round baking pan with parchment paper; coat paper with cooking spray. Sprinkle with 1/4 teaspoon cinnamon. Arrange apple slices in a single layer over cinnamon.
2 – In a small bowl, cream butter and brown sugar until crumbly, about 2 minutes.
3 – Beat in egg. Add milk and vanilla; beat on low speed until blended. Combine the flour, baking powder, nutmeg, honey and remaining cinnamon; stir into creamed mixture just until blended. Spoon over apple.
4 – Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Invert immediately onto a serving plate; drizzle with honey. Serve warm if desired.
